Tortellini Soup, YUM!
This is one of my favorite recipes. Easy to make. Makes a decent amount of food. And taste DELICIOUS!
1 or 2 chicken breast
1 can chicken broth
1 large can diced tomatoes
1/2 cup beer
1/2 to 1 cup vegetable juice
1 chopped onion
8 oz pkg of mushrooms (sliced)
1 bag/bunch spinach.
1 bag any cheese FROZEN tortellini
Add chicken broth, tomatoes, beer, vegetable juice, garlic, and chicken breast in Dutch oven.
Salt & pepper to taste.
Place over medium heat, cover and bring to a boil.
Cook untill chicken is done. Generally 20 minutes to half hour.
Remove chicken and allow to cool, then dice in whatever size pieces you want.
Place mushrooms and onions in pot, re cover and bring to a boil.
When the veggies are cooked put the chicken in the pot, and when it reaches the boiling point again, dump the tortellini in the pot and recover again.
Follow the cooking directions on the bag, but it’s usually 5-10 minutes. If it looks too thick for ya, you can put some water in it.
DO NOT OVER COOK PASTA OR OVER STIR!! It will make it mushy and fall apart.
Serve it with garlic cheese bread. YUM!! You can also sprinkle some parmesan and or romano cheese on top of the bowl to add to the flavor.
